Enjoy your barbecue but watch out for food safety


You can serve rare steak if that is how your customers like it.  This is because any food poisoning bacteria will only be on the outside of the steak and when it is grilled or fried that will kill the bacteria.

However, never serve undercooked burgers or sausages.barbeque_sausages

Burgers and sausages are made by mincing or grinding the meat up into very small pieces.  This enables the bacteria to be mixed all through the food and they can only be destroyed by thorough cooking.

So stay away from that traditional British bbq staple – the sausage which is burnt on the outside and raw on the inside !
