Is reheated rice dangerous ?

Yes ! probably one of the main food safety dangers in the kitchen which is commonly overlooked is the risk of reheated rice.


It is not the process of reheating the rice which causes the problem, the danger lies in the way that the rice is stored before it is reheated. Most rice has a bacteria clled Bacillus cereus, present and this can cause food poisoning. When the rice is cooked, the bacterial spores can despite quite high temperaturess this is not a danger if the rice is eaten straight away. If the rice is stored at room temperature, the spores will germinate and the bacteria will multiply and flourish which can cause vomiting or diarrhoea.

Just cooked cooked rice is not usually a problem. If you are storing rice and want to reheat it later make sure you store it in the fridge.
